Chef Modiri | Chobe Chilwero’s Grilled Custard

Ingredients

1 egg yolk
3 tablespoons white sugar
½ teaspoon salt
30G cornstarch
¼ teaspoon vanilla essence
300ml milk

Method
  • put 1 egg yolk in a pan
  • add 3 tablespoons sugar and ½ teaspoon salt
  • mix well to combine well
  • add 30g cornstarch, vanilla essence, 300ml milk and stir to dissolve everything, ensure it is smooth and there are no
  • lumps of cornstarch
  • put on very low heat for about a minute.
  • when the milk is warm add a little cheese (10g) cheddar…optional though
  • stir till melted and mixture looks like oatmeal, continue stirring till bubbles are seen and turn off heat.
  • cool it a bit, put in a container and flatten it
  • knock it down to eliminate the air bubbles
  • cool in the fridge for 2 hours
  • take it out onto the cutting board and cut into desired shapes and sizes
  • melt butter in a pan and fry the custard on medium heat, 3 minutes on each side or till golden brown
  • cool and serve with berries
